A leader's perspective...
Aromatic tagines, palm-spotted, red-earthed landscapes and limitless generosity define the true warmth of the Maghreb. Any visit, whether one week or one month, will give you a glimpse of the friendliness, hospitality, vibrancy and flavour of this Berber-Arab-Spanish-Portuguese-French melting pot in a country whose landscape varies as much as its culture and history. The thousands of street cafes lining the boulevards and highways from Tangiers to Laayoune attest to the fact that Morocco and Moroccans must be observed intently, lingeringly and preferably over a long cup of coffee. While I can’t prolong my small cup of 'nos-nos' (half espresso, half milk) as long as a Moroccan, I’m always up for the challenge, be it in a sunny Essaouiran cafe or on a rooftop terrace in Marrakech or overlooking the valleys and mountains of the High Atlas. A feast in Fez
The medina in Fez is one of the oldest, most tangled networks of market stalls in the world. While the main thoroughfares are a haven of leather bags, brass tools and lanterns, head down any of the smaller alleys and you're likely to get utterly lost. It was down one of these, in the heart of the real Fez, that we enjoyed one of the best local dining experiences of our trip. Having been welcomed into the small local 'cafe' in a manner that suggested we were the only tourists ever to enter, the chef emerged and grabbed my partner's hand, dragging him into the kitchen. After being offered everything from carrots to what may have been sheep eyeballs, he returned without clue what he had ordered yet everything was delicious. We paid and left to a parade of waves and smiles, the locals perhaps knowing we would never find our way home.
